Kiwi Tomatillo Salsa Verde

Kiwi Tomatillo Salsa Verde is made with kiwi, tomatillos, onion, lime juice, cilantro, jalapeño peppers and a little sugar and salt.

Tomatillos are tiny, round fruits which resemble small tomatoes whose outer covering is papery. They are grouped into the nightshade family together with tomatoes.

Kiwi Tomatillo Salsa Verde

Tomatillos are usually green in colour but can ripen and become red, yellow or purple.

They are a good source of vitamin K, vitamin C, manganese, potassium, niacin, healthy omega 6 fatty acids and low in calories.

They can be consumed raw, especially in salads.

N/B: Tomatillos are also referred to as green tomatoes. However, you should not confuse them with the American green tomatoes which are basically unripe tomatoes.

Kiwi Tomatillo Salsa Verde Ingredients

Ingredients

  • 1 ½ lb. of tomatillos
  • 1 tablespoon of fresh lime juice
  • 1 peeled and diced kiwi fruit
  • ½ cup of cilantro leaves
  • ½ cup of well chopped white onion
  • 2 Jalapeño peppers stemmed, seeded and sliced
  • ¼ teaspoon of sugar
  • Salt

Instructions

  1. Carefully remove husks from the tomatillos and then wash with cold water. Slice them into four pieces each and then put them on a greased baking pan. Place the baking pan over high heat of the oven. Be keen to turn the tomatillos after every two minutes so that they do not get burnt. When they change to brown, remove the pan from the oven.
  2. Blend the peeled and diced kiwi fruit, cilantro leaves, chopped onion, sugar, lime juice and Jalapeño peppers using a food processor or blender.
  3. Add the roasted tomatillo to the mixture in the food processor/blender and pulse until they mix completely.
  4. Add salt and then place them in a fridge for about 30 minutes before consuming. Enjoy it with chicken, fish, beef, pork or meal of your choice.

N/B: It’s recommendable to roast the tomatillos before you start preparing them. Roasting brings out the sweet flavor and reduces the acidity that is found in raw tomatillos.

Salsa Verde tends to lose its flavor quickly when fermented for long hours. Adding cilantro or lime juice to it when serving boosts the flavor.
